Sometimes it’s just nice to try something different, so why not try my wholesome middle eastern quinoa recipe for a delicious healthy lunch………..

Ingredients
225g cooked quinoa
2 large carrots, grated
1 bunch spring onions, chopped
75g pumpkin seeds
50g goji berries
25g chopped mint
25g chopped parsley
For the dressing
50ml olive oil
1 lemon, juiced
½ tsp allspice
½ tsp cinnamon
1 tsp honey
Salt & pepper
Method
Make the dressing by whisking all the ingredients together to make sure they’re fully combined.
Mix together all the ingredients and then pour over the dressing and mix well. Allow to sit for a couple of hours so that the flavours infuse and the goji berries go plump.
Serve on it’s own or with grilled chicken or fish.
