
How do I make Fajitas healthy?
We’re constantly being told that in order to eat healthily we have to give up lots of the things we like, but often, just making things from scratch can remove the hidden ‘nasties’ from our favourite foods. If you make things yourself, you’re in control of the amount of salt, sugar and fat that goes into your food, and it can be much more satisfying!

There’s nothing wrong with buying ready made tortilla wraps as you can get good quality wholemeal ones in the supermarkets, and you can serve with some green leaves and a small amount of grated cheese. The following serves 2 people.
For the filling
- 2 chicken breast fillets, cubed
- 1 onion, sliced thinly
- 1 chilli, chopped
- 1 lime, juiced
- 1 garlic clove, crushed
- 1tsp smoked paprika
- 1tsp ground cumin
- A glug of olive oil
- Ground black pepper to taste
Mix all the ingredients well in a bowl. Leave for at least 2 hours or preferably overnight to marinade. When ready, stir fry in a wok until the chicken is cooked through (about 10 minutes).

For the guacamole
- 2 avocados
- 1 chilli, chopped
- 1 lime, juiced
- Small bunch of coriander, chopped finely
- Ground black pepper to taste
Mash the avocados in a bowl (or use a blender) and then add the other ingredients and mix well. Make just before serving.

For the refried beans
- 1 tin Pinto beans, drained and mashed
- 1 onion finely chopped
- 1 tsp ground cumin
- Pinch of chilli flakes
- 1/2 lime, juiced
- Olive oil to fry
Fry the onion in a small amount of the olive oil until softened. Add the chilli flakes and cumin and fry until fragrant. Add the beans and lime, and fry until heated through and well mixed.
For the corn salad
- 2 corn cobs, corn removed
- 1 red onion, finely sliced
- 1 garlic clove, crushed
- 1 tsp allspice
- Pinch of chilli flakes
- 1/2 lime, juiced
- Bunch of mint, chopped
- Bunch of coriander, chopped
- Pecorino cheese shavings to serve
Sauté the corn kernels, onion, chilli and garlic until soft. Add the allspice and cook until fragrant.
Serve warm with shaved pecorino.
